This past week I was on the Oregon Coast for a family reunion. Even though the weather wasn’t ideal we still made time for s’mores—which are a summer must! It got me thinking about how great it would be to be able to combine two of my loves—s’mores and popcorn. So this recipe was born. I don’t know if there are other recipes like this already, but I experiments at the cabin and I think I have it perfected! I made two different kinds…one with melted marshmallows and one with unmelted marshmallows. After an extensive taste test the melted marshmallow version won!
11.5 ounces bag of milk chocolate
10 ounce bag of mini marshmallows
3 Tablespoons of butter
5 Graham Crackers
First you need to pop your popcorn. I used 1/2 cup of popcorn kernels. Then melt the chocolate in a double boiler or the microwave. I don’t have a microwave so I used the double boiler. Drizzle the melted chocolate over the popped popcorn—-try to get it as evenly coated as possible. Next melt butter in saucepan over low heat. Add in the marshmallows and stir until completely melted. Drizzle melted marshmallows onto the popcorn. Stir. Crumble up graham crackers and sprinkle over popcorn mixture. Now DEVOUR!
